  • 2 large free range egg yolks, room temperature
  • 1 crushed garlic clove

Stir the egg mixture as it cooks over a gentle heat then serve with hot toasted bread and the grilled tomatoes. The oil in the dressing stops the eggs from sticking to the pan for easy washing up. Extra seasoning is not really necessary, making this a good recipe for those watching their sodium intake, although you can add a little salt and freshly ground black pepper.
